As with most people, I was an adult before I really appreciated brussels sprouts. But I have a hunch it had more to do with finally enjoying them cooked properly rather than gaining an acquired tasted. The steamed brussel sprouts of my childhood never stood a chance. After you try these luscious, oven roasted brown sugar bacon brussels sprouts, you will never cook them any other way. And bonus–they could not be any easier!
Brown sugar and bacon? Yes, please!
I’ve always preferred my sprouts roasted, because I feel like it helps take some of the inherent bitterness away. But roasting them with brown sugar takes them to a whole other level. The olive oil and brown sugar almost create a glaze. And the bacon? Well, at Tinselbox we are firm believers that bacon makes everything better and this recipe is no exception. The saltiness of the bacon balances the sweetness of the brown sugar. And, the crisp bits of bacon are the perfect textural addition to the firm, but tender sprouts.
Quick & easy
Not only is this recipe delicious, but it seriously could not be easier. Just combine, roast and in about 30 (mostly hands-off) minutes, your side dish is complete. You could roast some chicken alongside for a super easy weeknight dinner, or make a batch for a holiday meal. One of my favorite weeknight dinners is oven roasted chicken thighs. Here’s a simple, yet super tasty, version to try. No matter why you cook these, I know you’ll love them. I mean, just look at those cripsy edges on the brussels sprouts!

Brown Sugar Bacon Roasted Sweet Potatoes

- 1 1/4 pounds Brussels sprouts trimmed and cut in half
- 1/4 cup olive oil
- 1/2 cup brown sugar
- 5 slices bacon diced

- Preheat oven to 425.
- Add brussel sprouts, olive oil and brown sugar on a large baking sheet. Stir everything together to get the Brussels sprouts well-coated (your hands work well for this). Spread the sprouts on the baking sheet in a single layer, cut-side down.
- Sprinkle bacon pieces in spaces between the Brussels sprouts directly onto the pan. This helps the bacon get crispier.
- Roast for 15 minutes. After 15 minutes, use a large spatula to give everything a good mix. Spread back into a single layer and return to the oven. Roast another 5-10 minutes, or until the brussels sprouts are browned and the bacon starts to crisp.
