These Apple Tuna Salad Sliders were the *BIGGEST* hit with my friends! This is so exciting… I HAD TO SHARE! The apples were delightfully crisp and sweet. Paired with the soft tuna, and the crunch of the celery. Each was a mini slider packed with protein and antioxidants.

This is how this recipe came about. I just threw an impromptu play date for some of my mommy friends after an early release date from summer camp. I wanted to have a delicious low carb option that would also fill us up. I like to make my tuna salad tea sandwiches, but I wanted to make it healthier.
You know, us moms we never get a lot of time together. The kids are scheduled into so many activities, you have to seize the opportunities. This play date was great, but he kids really wanted to get into the mommy food. I think they only wanted it because it was off limits. I just didn’t make enough for 10 kids.
Even though not all my friends are watching their gluten, we all love whole healthy ingredients. While the kids may not have liked being left out, it was great to have mommy food.
This is one of those recipes you will love if you eat gluten free, low carb or none of the above.
I went to the farmer’s market and picked up green onion, celery and apples. My favorite apples for this are Pink Lady. While any variety will do, the sweetness is perfect for a summer afternoon.
The first “official” farmers market was in 1930, but outdoor markets have been around much longer than that. It is like you are stepping back in time when you shop outside. I love that!
Another great recipe I made for a summer party is Lemon Orzo Chicken Pasta. This is a crowd pleaser. I also had hummus and veggies, meatballs and macaroons at my get together.

- 2 cans of packed tuna
- 4 green onions coarsely chopped
- 5 celery stalks coarsely chopped
- 2 tbsp mayonnaise
- 3 Pink Lady Apples
Ingredients

- Drain the cans and place tuna in large bowl.
- Add onions, celery, and mayonnaise to the bowl. Stir
- Slice apples lengthwise into rounds
- Place tuna salad on apple rounds
- Sprinkle with salt
PARTY TIP: Make double the tuna salad recipe, and put the other half in the food processor. Spoon the smooth tuna mixture between bread for tuna sandwiches. Roll the sides in chopped walnuts. That is how I usually make this recipe, and it is still a FAVORITE.
