We had a little over an hour until my daughter was headed to a community swim party. It was a potluck, and I decided NOT to just pick up something at the store. She wanted to make cupcakes, so instead of buying them we bought the ingredients instead. GASP. Will we make it in time? Sometimes she talks me into these things. We went home to make our easy, quick watermelon cupcake recipe.
These DELICIOUS cupcakes (it’s all in the frosting, guys) had to be fast because that party was at 10:15, and it was 9 am when we left for the store.
$10 and a little bit of bonding time. Everyone was raving about these, and she was able to share her appreciation for the swim staff with these treats.
I am telling you that all of us busy people should do this more often! This is high impact bonding.

That actually makes me feel uncomfortable. I like spreading love and joy with treats, gifts and parties. I also love to make people laugh. Letting a few cupcakes like this go to the party, well what mom can’t relate!
I think it is hilarious, and I did send a silly one.
Easy, quick watermelon cupcakes with the BEST buttercream frosting
What you need
- Cake mix and ingredients to make
- Green cupcake liners
- Green and red food dye
- 3/4 tsp watermelon kool-aid
- 1 cup unsalted butter (2 sticks or ½ pound), softened (but not melted!)
- 3-4 cups confectioners (powdered) sugar
- 1 tablespoon vanilla extract
- up to 4 tablespoons milk
- Mini chocolate chips
1.Make a batch of vanilla cupcakes and add green food dye and use green liners. OR just use green liners. I think that would have been just as darling. Adding a liner outside of the one you baked them in adds a punch of color.
2. Cool cupcakes after baking for 15 minutes
We made the frosting while these baked, and got her gear and lunch together while they cooled.
3. Frost with watermelon buttercream
4. Sprinkle with mini chocolate chips
The Best WATERMELON Buttercream Frosting Ingredients:
- 1 cup unsalted butter (2 sticks or ½ pound), softened (but not melted!)
- 4-5 cups confectioners (powdered) sugar
- 1 tablespoon vanilla extract
- up to 4 tablespoons milk
- 3/4 tsp watermelon kool aid
- 4-8 drops of red food coloring
The Best Vanilla Buttercream Frosting Instructions:
Beat butter with a mixer on medium speed. Add 4 cups of powdered sugar at a slow speed until the sugar has been incorporated with the butter. After the sugar and butter are creamy, set mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. Add up to a cup of powdered sugar or a tablespoon of milk until you reached the right consistency. Add kool aid and red food dye to dark pink
Plan for a batch of frosting for each cake mix.
