It’s the middle of the holiday season with all the hustle and bustle to go with it all. On the calendar tomorrow are 2 parties and a holiday performance.  I decided tonight is going to be a snuggle in to eat family night with one of our favorite recipes.

It is wonderful to take that random night off and just be together. I had to resist the temptation to invite people over, and I was so glad I did.

An easy dinner side dish!

Stuffed mushrooms are not just a party food!  {Okay, yes this is FANTASTIC party food too} These morsels make a thoughtful addition to family dinner as well.

These are just a few reasons you should make this recipe tonight! This recipe includes ingredients you may already have in your pantry, and it takes 10 minutes to prepare and 15 minutes to cook.  Easy, peasy. All my recipes require deliciousness and no-fuss. Add on they FEEL fancy, so my husband lit up when he smells these in the oven.

This was my first time eating Red Baron Pizza, and it was really good!  The cheese bubbled and the crust had just the right crisp.  My daughters, who love cheese pizza jumped right in!

Yield 3-4 servings

You will love this recipe for Creamy Italian Stuffed Mushrooms with Breadcrumbs! It the perfect combination of creamy cheese and savory Italian spices. Melt in your mouth good, and SO hard to stop eating.

Ingredients

  • 1/3 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1 package (8 ounces) cream cheese
  • 1/3 cup shredded Four Cheese Parmesan/Asiago Blend (or Parmesan)
  • 1/4 cup Italian seasoned breadcrumbs
  • 3 teaspoons dried basil
  • 30 large fresh mushrooms (about 1-1/2 pounds)
  • 2 tablespoons butter, melted
  • 1 teaspoon  oil
  • 1-3 tablespoons of heavy cream (or whipping cream)

Instructions

  • Preheat oven to 400°.
  • In a large skillet, spray with non-stick
  • Saute onion and garlic in olive oil over medium heat 5 minutes in the large skillet. Add cream cheese and Four Cheese/Parmesan cheese; cook and stir until melted. Stir in bread crumbs and 2 tsps dried basil
  • Add 1-3 tablespoons of heavy cream to a creamy consistency
  • Remove mushroom stems and place mushroom caps upside down on a baking sheet. Brush with melted butter and spoon in mixture
  • Top with a dab of cheese and sprinkle with remaining dried basil
  • Bake, uncovered, 15-17 minutes or until mushrooms are tender.
  • Yield: 20-30 mushrooms
