So the Eastern half of the States were hit with a massive snow storm this past weekend. Depending on where you lived, and how often you see snow and familiar you are with it, seemed to determine panic and preparedness levels.

Despite seeing snow fairly often in the Winter, it’s rarely more than a during here in Virginia. So the fact that up to 6″ was predicted had a lot of people losing their minds.

People who aren’t particularly prepared to handle driving in the snow, rushing out to stores for their emergency items after the snow had already been falling for hours and sticking, to everything.

The top three items locally that everyone’s frantic to get their hands on? Milk, bread, and batteries. The second 2 I get. If the power goes out you can eat pb & j’s and batteries are an obvious. The milk, not so much. Is there some secret like milk sandwiches I’m unaware of?

Unluckily for me, I was already at the store when the snow started. Not for milk or bread mind you, but for a bottle of champagne and some fruit. I made it home safely, thankfully.

And as a delicious result, while my kids were losing there collective minds over the snow- I was sitting back enjoying a bowl of fresh strawberries and grapes paired with this amazing Champagne Cheesecake Fruit Dip. With a great new book in my hands, the snow falling outside my window, and the squeals coming from snow ball fights outside- it was the perfect way to spend the evening.

(Hope everyone else in my area code enjoyed their milk sandwiches, lol)

Champagne Cheesecake Fruit Dip

Ingredients

1 cup heavy whipping cream
1/4 cup champagne
8 oz cream cheese, softened
1 cup powdered sugar
festive sprinkles for topping, optional

Instructions

  1. In the bowl of a stand mixer, add the cream. Using the whisk attachment, whisk on medium high speed just until soft peaks form. Slowly stir in the champagne, and whip another 30 seconds or so- just until thickened.
  2. In a separate bowl, use a hand mixer to whip the cream cheese until smooth. Add the powdered sugar and mix in until completely incorporated and the mixture’s smooth. Fold the mixture into the whipped cream.
  3. Transfer the mixture to an air tight container, and refrigerate for at least 30 minutes or until ready to serve.
  4. Serve with your favorite fruit of choice. We like it with berries, cherries, grapes, and even sliced bananas.
