I was inspired when a friend of mine, a baker, made a beautiful simple cake without frosted sides. Her technique was flawless, but I did think that I could do this. I like to bake because I have some great recipes, but really it has to be on the easy level for me to succeed. The sides are always where it got difficult for me, and I always ran out of frosting. This cake was both pretty and delicious! Kudos to the chef… oh wait… that’s me!
Did you know that cakes date back to the 13th century? Of course, they were not made with frosting but filled with fruit, nuts and honey.
What you need for this amazing cake:
- Cake mix and ingredients to bake
- Quick release cake pan – 9 inch
- Frosting or make our buttercream frosting below
- Cake decorator
Instructions for frosting {everything but the sides}:
- Bake the cake mix in a 9 inch greased quick release pan. Use the bundt cake time.
- After it cools, release the cake
- Cut in half
- Frost the top of the bottom half with buttercream frosting using the decorator tip. Let sit for 1-2 hour to harden.
- Place the top of the cake on. Frost the top with the decorator.
- Decorate with fun toppings!
- Leave out at room temperature until you eat
Frosting… yes!
I have made this recipe so many times. It always comes out amazing. You will want two batches of frosting for this cake if you want to use the decorator.
Buttercream Frosting Ingredients:
1 cup unsalted butter (2 sticks or ½ pound), softened (but not melted!)
3-4 cups confectioners (powdered) sugar
1 tablespoon vanilla extract
up to 4 tablespoons milk
Instructions
Beat butter with a mixer on medium speed. Add 3-4 cups of powdered sugar at a slow speed until the sugar has been incorporated with the butter. After the sugar and butter are creamy, set mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. Add up to a cup of powdered sugar or a tablespoon of milk until you reached the right consistency.
Plan for a batch of frosting for each cake mix.
Beautiful, simple cake without frosted sides
This is when it all comes together. It becomes both beautiful and delicious. It will be very hard to wait to eat, but you can and should make it the night before.
