Spring is here! Well technically it played peekaboo with us here in Minnesota. It was 34 yesterday and snowing. I mean what is Mother Nature thinking? Seriously, who give someone days of 50-60 degree weather and then boom you’re back to Winter. I’ll tell you who does that, Minnesota does.

But in the midst of this weather dilemma, I still treated my time like it was Spring and grilled out! You guys will absolutely love these BBQ Chicken Foil Packs! They have so much flavor! Literally they are packed with all things delicious and this is a meal in itself.

I grew up on what we would call hobo dinners, where you have your meat, potato and veggies in your foil along with some seasonings and you cook it all up and have that as your meal. So I figured I’d give one of my childhood favorites a makeover and add some of my favorite flavors together and these BBQ Chicken Foil Packs were born.

So BBQ Chicken is one of my absolute favorite flavors regardless. We love doing BBQ Chicken Kebabs so I kinda deconstructed my kebab that we do, added some potatoes and corn and one of the best easy dinners I’ve had in a long time was created!

One good thing about these is that you an make them on the grill or in the oven. On day’s when it’s windy or cold or heck even in the middle of the winter when we want a reminder of warmer times, we like to do them in the oven. But it still gives us the sense of having a picnic or a grill out!

BBQ Chicken Foil Packs

So if you’re looking for fun, easy and super DELICIOUS lunch or dinner that could easily feed a crowd then these BBQ Chicken Foil packs are exactly the thing you need!

INGREDIENTS:

2 Chicken breasts, diced
1 cup BBQ sauce, more for dopping
1 large baking potato, Diced
1 cup corn
1/2 cup red onion, diced
1 red bell pepper, diced
1 1/2 cup pineapple chunks

 

DIRECTIONS:

Preheat grill or oven to 350.
In bowl mix together your chicken and barbecue sauce.
In double lined or heavy duty tin foil add your potatoes, chicken, corn, onion, pepper and pineapple.
Fold your tin foil over the BBQ Chicken and then roll up on ends.
Place on baking sheet or directly on grill and cook for about 40-50 minutes or until potatoes are tender.
Let cool slightly and serve.

I would say between 2-3 depending on how large your chicken breasts are.
